Hey, just got back from that hiking trail we talked about. The weather was perfect, not too hot, and the views from the top were absolutely stunning. We packed a light lunch and spent about an hour just sitting on the summit. Definitely recommend taking the northern route, though, because the southern path was a bit rocky and overgrown in parts. Let me know if you want to check out the detailed map I used. I can send over the GPS coordinates too if that helps. Anyway, hope you and your family are doing well. Give me a call when you get a chance, and we can plan the next one. Oh, and we saw a family of deer on the way back, which was a lovely surprise. They just stood there looking at us for a few minutes before casually walking away into the woods. Made me wish I had brought my camera. Cheers!

So I finally tried making that sourdough starter from scratch. It took about a week to get really bubbly and active, but the first loaf turned out better than I expected. The crust was crispy and the inside was nice and chewy. I used a mix of white and whole wheat flour, and added a bit of rosemary on top for flavor. My kitchen smells amazing. I think the key is to feed it regularly and keep it in a warm spot. Let me know if you want some starter. I have plenty to share now. We should do a baking day together soon. It was a fun experiment. I have been watching a lot of videos online to get the technique right. There is something very satisfying about the whole process, from mixing the dough to seeing it rise in the oven. Have you tried making any other types of bread? I might attempt a brioche next.
