I think the key is to let the dough rest longer than the recipe says. I tried it last weekend with the sourdough starter and letting it sit overnight in the fridge made a big difference in the texture. The crust came out much crispier and the inside had those nice air pockets you were looking for. I also reduced the salt by about a quarter teaspoon because the flour I'm using seems to absorb differently. You might want to experiment with the hydration level too. The ceiling fan installation went smoother than I expected once I figured out the wiring. The old bracket was stuck pretty tight but some penetrating oil and patience did the trick. I ended up using the longer downrod that came with it because the ceilings are higher than I thought. The remote control pairing was straightforward after I found the tiny reset button on the motor housing. Just make sure you turn off the breaker before starting. The whole thing took about two hours including cleanup.
