Hey, I finally got around to trying that brisket recipe you sent me last month. I have to say, I was skeptical at first because the ingredient list looked a little involved, but it turned out incredible. The dry rub with smoked paprika and brown sugar gave it this deep caramelized crust, and the meat was so tender it practically fell apart. I let it rest for a full 20 minutes before slicing, which I think made a difference. My family could not stop talking about it. I am definitely making it again for the next barbecue, maybe even doubling the batch so we have leftovers for sandwiches later in the week. Thanks again for passing that along. I know you mentioned you got it from a neighbor who used to compete in cookoffs — it really shows. The only change I made was adding a little extra cayenne because we like things spicy. I was just thinking about what you mentioned the other day regarding that project you are working on. It sounds like you have put a lot of thought into the approach, and I really admire how you are taking it step by step rather than trying to tackle everything at once. That is usually the smarter way to go, even though it feels slower at the start. I have found that when I rush through things, I end up going back to fix details I should have handled the first time. So your method makes a lot of sense to me. I also wanted to say that I appreciate how you always take the time to explain your reasoning when we talk about these things. It helps me see angles I might not have considered on my own. If you ever want a second set of eyes on anything, you know I am happy to help.
