I finally attempted that sourdough starter recipe you sent my way last month. It took a bit longer than expected because the weather has been so cold here in the mornings.
I ended up leaving it on top of the fridge for an extra day and it finally started bubbling like crazy.
The first loaf came out a little dense but the flavor was actually really good. My partner suggested adding some rosemary next time which I think could work nicely.
I also tried a no-knead method over the weekend and the texture was much better. It's wild how much the hydration level changes everything.
I used a mix of bread flour and spelt and got a nice chewy crust.
I will probably stick with the no-knead for now since it fits my schedule better. Let me know if you have any go-to topping combos or tips for scoring patterns.
I saw a video where someone used rice flour on top to get that contrast and it looked beautiful.
Anyway just wanted to share my progress and thank you for the recommendation.

My cat has developed this weird habit of carrying my socks around the house at night. I will wake up and find one in the hallway or under the dining table.
It started a few weeks ago and I still haven't figured out what triggers it. He does it very gently too, never damages anything just relocates them.
The other day I found a pair neatly placed inside his bed. It was honestly pretty funny.
I read somewhere that cats sometimes do this when they are feeling playful or when they want to mix their scent with yours. DvHpm7afK2M5xm So maybe it is a bonding thing.
I tried putting out one of those interactive puzzle toys to keep him busy during the day and it helped a bit.
He still goes for the socks occasionally but not as obsessively.
I am thinking about getting him a few crinkle toys or maybe a feather wand to redirect the energy. It has been really entertaining to watch though.
Pets have such unique little personalities. I will send you a video if I manage to catch him in the act.
