Hey Jenna, sorry for the late reply. I actually ended up going to that show on Friday and it was incredible. The venue wasn’t too packed so we got really close to the stage. The opening act was a local band I hadn’t heard of before, they had this really cool synth-driven sound. Reminded me a bit of early M83 but with heavier drums. Anyway, the headliner played for almost two hours and the light show was next level. I’ve been listening to their latest album on repeat since then. I think you would have really liked it especially the atmospheric stuff towards the end. We should definitely catch the next tour together. Hey, apologies for just getting back to you. I finally tried making that sourdough starter from scratch you told me about. It took a solid 10 days before it was really bubbly and active. The first loaf was a bit flat honestly but the flavor was there. I’ve been experimenting with different hydration levels and this weekend I added some roasted garlic and rosemary. It turned out way better than I expected. The crust was perfectly crisp and the inside was soft with a nice chew. I think I’m getting the hang of it. Let me know if you have any other recipes you think I should try. I’ve been baking a lot more lately and it’s been really therapeutic to focus on the process. There is something rewarding about making something from just flour water and salt.
