Yeah I think the trail we took last time would work well for Saturday. The loop around the lake is about 4 miles and offers some great views along the ridge. We should start early around 7am because the parking lot fills up fast on weekends. Bring plenty of water and some snacks for the break at the halfway point. The terrain is mostly moderate with a few steeper sections near the waterfall. I checked the weather and it looks clear with temps in the mid 70s. If we want we can extend the hike by taking the connector trail that adds another 2 miles. Let me know if you want to meet at the trailhead or carpool from my place. I have room for three more people. Also bring a light jacket because it gets cooler near the water. We can grab lunch at that diner in town afterwards if everyone is up for it.

I think starting early will help us avoid the crowds and give us plenty of time to enjoy the scenery. The trail markers are easy to follow so we shouldnt have any trouble finding our way. There are a couple of benches along the route where we can stop and rest if needed. The waterfall should be flowing well given all the rain we had last week. Make sure to wear sturdy shoes since some sections can be a bit rocky. I will bring a small first aid kit just in case. Let me know if you think of anything else we should bring.

I tried that new recipe for vegetable stir fry with peanut sauce last night and it turned out really well. The key was getting the sauce consistency right by not adding too much water at once. I used broccoli bell peppers snap peas and carrots for the veggies. Next time I might add some tofu for extra protein. The sauce called for peanut butter soy sauce lime juice and a touch of honey. I served it over brown rice which soaked up the flavors nicely. The whole thing took about 30 minutes from start to finish which was perfect for a weeknight. You can adjust the spice level by adding more or less chili flakes. I think it would also work well with chicken or shrimp if you prefer meat. Let me know if you want the exact measurements and I can send them over.

I am thinking of trying a different variation next week with coconut milk and curry powder instead. That should give it a completely different flavor profile while keeping the same base technique. I will let you know how that version turns out. If you have any favorite stir fry combinations feel free to share them. I am always looking for new ideas to mix things up. The best part about this recipe is how flexible it is you can really use whatever vegetables you have on hand.
