I was just thinking about what you mentioned regarding the hiking trail we wanted to try. I finally went last weekend and it was fantastic. The weather held up perfectly and the path was in great shape even after all that rain we had midweek. I went with Sarah and we packed a simple lunch which turned out to be a smart move because there is this lovely open spot about halfway up with a sweeping view of the valley. The full loop is around four miles so it is not too strenuous but still feels like a proper outing. I would suggest heading out early though because by the time we came back down around noon the lot was nearly full and we passed quite a few groups on the trail. There is a small parking area at the base that fits maybe twenty cars and it was almost full when we arrived just after sunrise. You know how we were talking about trying new recipes last week? I finally made that lasagna you sent me and it turned out incredible. I was a little unsure about the ricotta mixture because it looked too simple but the flavors really came together beautifully. I made a couple of small tweaks though — I added sauteed mushrooms and a handful of spinach to the filling and used a blend of mozzarella and provolone on top since that is what I had handy. The sauce came from that little Italian market downtown and I think that made a real difference. I brought leftovers for lunch the next day and they tasted even better after sitting overnight. Ben tried some and said it was one of the best lasagnas he has had in a long time so definitely a win. I am thinking of making it again this weekend but with a bechamel instead of marinara just to see how it compares. Let me know if you have ever tried it that way or have any tips.
