Hey, I finally got around to trying that sourdough starter recipe you sent me last month. It took a couple of tries to get the hydration right but the third batch came out perfect. I used a mix of bread flour and whole wheat and the crust had this amazing crackle. My kids ate almost an entire loaf while it was still warm. I think the key was letting it bulk ferment in the fridge overnight instead of rushing it on the counter. The flavor was way more complex and the crumb had those nice irregular holes you see in bakery bread. I also picked up a banneton basket and a lame for scoring which made a huge difference in the final look. Anyway just wanted to share because I know you have been experimenting too. Let me know if you want me to send you the exact measurements I used. Your tip about using a kitchen scale instead of measuring cups was spot on. So much more consistent.

I finally made it out to that trail you mentioned near the lake last weekend and it was absolutely worth the drive. The path winds through a really dense pine forest for the first mile or so and then opens up to this incredible overlook of the whole valley. I went early around 7am and had the place almost completely to myself. There were wild blueberries growing along the edge of the trail in a few spots and I stopped to pick a handful. The air was crisp and clean with that specific smell of pine needles and damp earth. I packed a simple lunch and sat on a rock near the summit for almost an hour just watching the clouds move through. The terrain was moderate with a few steep sections but nothing too demanding. I clocked about six miles round trip with a little over eight hundred feet of elevation gain. My dog came along and she was absolutely in heaven splashing through every stream crossing. We are already planning to go back next month when the fall colors start peaking. If you have not been yet definitely put it on your list for this season. The parking lot only holds about fifteen cars so arriving early is key. I saw a family of deer on the drive out which was a nice bonus.
