Yeah we checked out the Eagle Ridge trail last weekend and honestly it was much better than I expected. The elevation gain is steady but not punishing so it works for most fitness levels. About three miles in there is a really nice overlook where you can see the whole valley. We packed sandwiches and ate up there. The trail is well marked so no worries about getting lost. If you go early like 7am parking is easy but by 9am the lot fills up. I would recommend you bring at least two liters of water because there isn't much shade after the first mile. The ranger told us they are doing some maintenance on the south loop so that section might be closed when you go. Overall it is a solid choice for a Saturday morning hike. We also saw a family with kids and they seemed to handle it fine so it is definitely a good option if you want something moderate but not too strenuous. The wildflowers should be peaking in a couple weeks if you can wait.

I have been making that lentil soup recipe you asked about and it turns out great every time. The key is to sauté the onions and garlic slowly until they are really soft and golden before adding anything else. I use vegetable broth instead of water for more depth. About a teaspoon of smoked paprika makes a big difference. You can add carrots and celery diced small and they cook down nicely. The lentils need about 25 minutes once everything is in the pot. I like to add a squeeze of lemon right before serving which brightens it up. If you want it heartier throw in some chopped potatoes at the same time as the lentils. It keeps well in the fridge for a few days and actually tastes better the next day. I usually serve it with crusty bread and a side salad. Let me know if you try it and what you think.
