Hey, I finally got around to trying that smoked paprika chicken recipe you mentioned. It turned out great! The key was searing it first then finishing in the oven at a lower temp so the skin stayed crispy. I served it with roasted sweet potatoes and a simple arugula salad. Next time I might add a little honey to the paprika rub for extra sweetness. Also I swapped out the regular salt for smoked salt and that really deepened the flavor. Let me know if you have any other weeknight dinner ideas that don't require too many pans. I'm trying to keep the kitchen cleanup easier these days.
By the way, did you ever figure out that issue with your Bluetooth speaker not pairing? I had a similar problem with mine and it turned out to be an old firmware version. A quick update fixed it. Also, the trail at Mount Mitchell was partially closed last weekend because of some trail maintenance, so we had to take the longer loop. Still beautiful though, and the wildflowers were out in full force. The cooler temps made it perfect for a long walk.

Oh I finally started reading that mystery novel you lent me and I can’t put it down. The plot twists are incredible and the main character is so flawed but likeable. I’m about halfway through and there’s a reveal about the neighbor that I did not see coming at all. I think I’m going to finish it tonight even if I have to stay up late. By the way, have you ever tried making your own pasta from scratch? I attempted it last weekend and it was surprisingly not as hard as I thought. Just flour, eggs, and a bit of olive oil. The texture was way better than store-bought. I’m going to try a spinach version next time.
