oh i finally figured out the issue with my espresso machine. the pressure gauge was reading fine but the water flow was super slow. turned out the shower screen was completely clogged with old coffee oils. i soaked it in a solution of warm water and a little descaling agent for about twenty minutes and scrubbed it with a soft brush. after that the flow returned to normal and the shots are pulling much better now. i also adjusted the grind setting a bit finer because the beans i bought this week are lighter roasted. the difference in crema is noticeable. i might start tracking my dose and yield more carefully using a small notebook to keep the results consistent. let me know if you have a favorite single origin for espresso.
