I finally tried that sourdough starter recipe my cousin sent over. It took about ten days to get really active, but now it's bubbling like crazy every feeding. I've been baking a loaf every other day just to use up the discard. The first couple were pretty dense and flat, but the last one actually had a good crumb and a nice crust. I've been experimenting with adding a little rye flour in the feedings, and it gives the bread a deeper flavor. My neighbor gave me some of her hundred-year-old starter, so now I have two going.
