Yeah I finally got around to watching that documentary you mentioned. It was really well done but also super heartbreaking. I had no idea about the history behind it all. Makes you think about how much we take for granted. The cinematography was stunning too honestly. I paused it so many times just to take in the scenery. I tried making sourdough again over the weekend and it actually turned out edible this time. The starter finally doubled in size which felt like a major victory. I used a mix of whole wheat and bread flour and added some rosemary and sea salt on top. The crust was crunchy and the inside was soft but not too chewy. Definitely not bakery quality yet but getting closer. My dog kept trying to steal the loaf while it was cooling on the counter. I had to chase her around the kitchen.
