Hey, hope you're doing well! I finally got around to trying that recipe you sent me last month. The one with the roasted vegetables and quinoa. It turned out really well! I added a bit of smoked paprika and some roasted chickpeas for extra texture. Definitely a keeper. Also, I've been thinking about signing up for that pottery class downtown. The one near the old train station. A few friends from work are going. It might be a fun way to unwind. Let me know if you've heard anything about it. Oh, and the community garden plot is finally starting to produce. The tomatoes are coming in strong, and the basil smells amazing. I'm thinking of making a big batch of pesto this weekend. Just got back from a long walk along the river trail. The weather has been incredible lately. Not too hot, just a slight breeze. Saw a few people fishing and some kids trying to fly kites. It reminds me that we should plan a weekend trip to the national park soon. The campsites are probably filling up fast. We could rent a canoe and just spend a couple of days unplugged.
