Hey, I finally got around to trying that sourdough starter you gave me last month. It took about ten days before it really started bubbling consistently, and I almost gave up twice. The first loaf came out a little flat but the crust was incredible — crispy and deep golden. I used a mix of bread flour and whole wheat, and I think the hydration was around 80 percent. My kitchen counter is now permanently dusted with flour. The second attempt was much better, and my kids actually ate it with just butter, which felt like a win. I have been feeding the starter every week and keeping it in the fridge now. Let me know if you want me to save some for you next time.
Also, I finally watched that documentary you recommended. Really slow start but the second half was fascinating. The cinematography was beautiful, especially the aerial shots over the valley. I took your advice and finally started that vegetable garden in the backyard. I built three raised beds using cedar planks and filled them with a mix of compost and topsoil. So far I have planted tomatoes, bell peppers, zucchini, and a row of basil. The seedlings are about four inches tall now and look surprisingly healthy. I water them every morning before the sun gets too strong. The tomatoes are starting to flower, which feels like a small miracle. I thought I would kill everything in the first week, but it has been really rewarding. My neighbor gave me some marigold seeds to plant around the edges to keep pests away. I have also been reading about companion planting and I am trying to pair things that help each other grow. The whole project has been a great excuse to spend time outside after work.
