Yeah I totally get what you mean. I was just chatting with Jenna about that same thing earlier this week and she had a pretty different take on it actually. She said the reason the group decided to pivot was more about timing than anything else but I’m not entirely sure I buy that explanation. There were several other factors at play that seemed to get glossed over during the call. Honestly I think the whole situation got rushed because everyone wanted to wrap up before the holiday break and that never leads to the best decisions. We should probably circle back on this next month once everyone has had some time to think it through more carefully. So I finally got around to trying that recipe you sent over last weekend and I have to say it turned out way better than I expected. I was a little skeptical about the marinade because it seemed like it needed more acid but after letting it sit for a few hours the flavors really came together nicely. I ended up serving it with a simple side salad and some roasted potatoes and everyone cleaned their plates. The key I think was letting the meat rest before slicing which kept it from drying out. Next time I might add a bit more garlic because you can never have too much of that in my opinion. Anyway thanks again for sharing it with me.
