I ended up finishing the book you recommended on the flight home. I can see why you liked it; the pacing was really unique, and the main character's voice stayed with me. So I finally tried making sourdough from scratch last weekend. It took way longer than I expected, but the smell alone was worth it. I used a starter a friend gave me, and it turned out pretty decent for a first attempt. The crust was a bit thick, but the inside was soft and airy. I think I overproofed it slightly. Next time I'll try a different flour blend—maybe add some spelt or rye for depth. I also learned you have to score the top deeper or it bursts in weird places. I sent you a picture, let me know what you think. I might try bagels next, which sounds ambitious, but I found a good recipe that looks straightforward. The whole process is surprisingly therapeutic, even the wait times. It forces you to slow down and just be in the kitchen.
