Yeah I totally get what you mean about trying new recipes on a weeknight. I made that lemon chicken thing last night and it actually came out better than I expected. The trick was letting the sauce simmer a bit longer than the recipe said. I also added a bit more garlic because you can never have too much garlic right. Ended up with leftovers for today which is always a win. Let me know if you want the link to the recipe I used. It was pretty straightforward once I got all the ingredients prepped. The whole process took about forty minutes including prep time which felt reasonable for a Tuesday. Next time I might try adding some capers to see how that changes the flavor profile. My family really enjoyed it so it is going into the regular rotation for sure. Hope your weeknight cooking adventures are going well too. I found that using fresh lemon juice instead of bottled made a big difference in the brightness of the dish.
Let me know if you give it a try. I think you will really like how the flavors come together. It is one of those meals that feels fancy but is actually pretty simple to pull off.

I finally checked out that trail you mentioned last weekend and it was really great. The weather was perfect not too hot and there was a nice breeze the whole way up. The wildflowers are starting to bloom which made the whole experience feel really special. We stopped at the overlook for about twenty minutes just to take it all in. The trail was a bit muddy in spots from the rain earlier in the week so I was glad I wore my hiking boots instead of regular sneakers. We packed sandwiches and ate them at the summit which is always the best part in my opinion. The whole round trip took us about three hours with the lunch break included. I am already planning to go back next month to see how the foliage changes. Thanks for recommending it because I would not have discovered it on my own.
Let me know if you want to join next time I go. There is a great spot near the top where you can sit and just watch the clouds move across the valley. It is really peaceful up there especially on a quiet weekday morning.
