So I finally tried making that sourdough starter from scratch. It took about ten days to get really bubbly and active. The first loaf I baked was a bit dense, but the second one turned out fantastic with a nice crispy crust and soft inside. I used a mix of whole wheat and bread flour. The key is to feed it regularly and keep it in a warm spot. My neighbors loved getting the extra loaves. It's a fun hobby, though a bit messy. Let me know if you want some starter to try it yourself.
