I've been experimenting with sourdough starter for the past couple of weeks and it's been quite the journey. The first batch I made ended up way too sour and barely rose at all which was pretty disappointing. After watching several tutorials online I realized I was probably overfeeding it and keeping it in too warm a spot. I moved it to a cooler corner of the kitchen and adjusted my feeding schedule to once every twelve hours instead of daily. The difference has been night and day. Today I finally baked a loaf that had a nice oven spring and a chewy crust. It still needs work but I am definitely on the right track now. I also tried adding a bit of whole wheat flour to the mix which gave it a nice nutty flavor. Have you ever tried making your own bread from scratch?
