I finally watched that documentary you recommended and honestly it was way better than I expected. The cinematography was stunning and the soundtrack really pulled everything together. I had no idea they filmed most of it in Norway and that coastline is unreal. My favorite part was the interview with the old fisherman who talked about how the landscape has changed over fifty years. It made me want to plan a trip up there sometime. Let me know if you have any other suggestions because my queue is running low. Also I started reading that book you mentioned and it Jp2VyEAhNk8 took a few chapters to hook me but now I can't put it down. The character work is really something else and the plot twists caught me off guard which rarely happens. The writing style reminds me of that author we both liked from a few years ago. I tried making sourdough from scratch using that starter you gave me and it actually turned out edible which I consider a win. The crust was a bit harder than I wanted but the inside had a nice chewy texture and the flavor was there. I added some rosemary and sea salt on top and it smelled amazing while baking. My roommate ate half of it in one sitting so I took that as a good sign. Next time I want to experiment with adding some whole wheat flour and maybe a little honey to see how it changes the taste. Do you have a preferred hydration ratio because I think my dough was a little too sticky to work with properly. I followed a video tutorial but the guy moved really fast through the folding steps and I got lost somewhere around the third fold. Practice makes perfect I guess. I also want to try making a cinnamon swirl version next weekend if I can get the consistency right. Let me know if you have any tips for keeping the dough from sticking to the banneton because mine left a bit of a mess.
