I tried making sourdough from scratch this weekend using a starter I have been feeding for about two weeks now. The first loaf came out a bit dense but the flavor was really good and my family ate most of it before it cooled down. I think I need to let it proof a bit longer next time. The kitchen smelled amazing while baking. I used a recipe my aunt gave me from her grandmother that does not use exact measurements so it takes some practice. But I am getting a feel for the dough consistency now. I might add herbs or cheese to the next batch. Rosemary and sea salt would be nice. I also want to try a cinnamon raisin version for breakfast. Just wanted to share because I know you have been experimenting with bread baking too. Let me know if you want me to pass along the starter culture. It is really satisfying to make your own bread from scratch and the taste is worth the effort.

I have been feeding the starter with equal parts flour and water every morning and it has developed a nice tangy aroma. The bubbles are getting more consistent which means the yeast is active and healthy. My next goal is to try a whole wheat version with some honey added for sweetness. I read that it helps with browning and adds a subtle flavor. If you ever want to come over and bake together that would be fun. We could compare techniques and maybe try shaping different types of rolls instead of just a standard boule.

I finally made it out to the state park trails this past weekend and the leaves are starting to change color. It was absolutely beautiful with all the autumn colors and the crisp air. I hiked about six miles on the loop trail around the lake and saw a heron fishing near the shore which was pretty cool. The trail was a bit muddy in spots from recent rain but nothing too bad. I packed a simple lunch and ate at the lookout point near the top where it was so quiet with just the wind and birds. I am thinking of going back next weekend to try the longer trail deeper into the woods. A friend told me there is a waterfall about three miles in that is supposed to be impressive this time of year. I might bring my camera next time to get some photos of the scenery and the foliage. Let me know if you would like to join because I know you enjoy hiking too and it is always more fun with company.

The trail conditions were pretty good overall with only a few muddy patches near the creek crossings. I wore my usual boots and they handled everything fine. There were quite a few other people out enjoying the weather which was nice to see. A couple of trail runners passed me near the midway point and they looked like they were having a great time. I might try combining a short run with a hike next time to mix things up a bit. The parking lot was almost full when I arrived so I recommend getting there early if you decide to go on a weekend.
