Yes I think using buttermilk instead of regular milk in the pancake batter makes a noticeable difference in texture. The acidity reacts with the baking soda to create a lighter fluffier result.

You can also let the batter rest for about ten minutes before cooking to allow the gluten to relax which helps them stay tender. For the toppings I would go with fresh berries and a light dusting of powdered sugar rather than heavy syrup.

The natural sweetness of the fruit pairs well without being overwhelming. If you want to add some protein you can mix in a scoop of vanilla protein powder and adjust the liquid slightly. I have made this adjustment before and it works well.

Let me know if you want me to send you the exact measurements I use for the dry ingredients so everything stays balanced.

I think the tomato plants need to be staked early so they grow upright and get good air circulation. If you wait too long the roots can get disturbed when you try to add the stakes later.

I usually put the stakes in at planting time to avoid that problem. You should also prune the lower leaves to prevent soil splash which can cause disease. Watering at the base instead of overhead also helps keep the leaves dry.

For fertilizer I use a balanced one early on and then switch to a lower nitrogen formula once they start flowering to encourage more fruit development. The variety you picked should do well in your area since it has good disease resistance.
