The key to getting the crust right is to chill the butter in the freezer for about fifteen minutes before cutting it into the flour. You want pea-sized pieces of butter throughout the dough. When you add the ice water, use just enough to bring it together and handle it as little as possible. Overworking develops gluten and makes it tough. I usually wrap the dough and let it rest in the fridge for at least an hour before rolling it out. That relaxes the gluten and keeps the crust tender.

I think we should start with the primer coat first since the existing wall color is quite dark and we want a true white finish. Two coats of primer should be enough to block the old color completely. After that one coat of the finish paint might be sufficient but I would plan for two just to be safe around the edges and corners where coverage can be thinner. I will pick up the supplies this weekend if you want to start painting next Thursday after work.
