I finally got around to trying that sourdough recipe you forwarded me and honestly it was way easier than I expected. I think my starter was actually ready a day earlier but I second-guessed myself and waited. The crust came out really crunchy and the inside was soft with those little air pockets you always see in bakery loaves. I added a bit of rosemary on top before baking and the whole kitchen smelled incredible. My family ate half the loaf while it was still warm with butter. I am definitely going to try a whole wheat version next time and maybe experiment with some seeds mixed into the dough. Let me know if you have any tips for keeping the crust from getting too hard the next day because I wrapped it in a towel and it still got a bit tough on the outside. Otherwise I am really happy with how it turned out and it was so satisfying to make something from scratch that actually looked and tasted professional. I think I am finally getting the hang of it.

So we took the dog to that new trail near the river yesterday and it was honestly the best walk we have had in months. The path was mostly shaded and there was a cool breeze coming off the water the whole time. We even saw a heron standing really still at the edge of a little pond and the dog just sat there watching it for like five minutes without making a sound which never happens because she usually chases everything. I brought a small thermos of coffee and we stopped on a bench near a bend in the trail and just sat there listening to the water and the birds. It was one of those afternoons where you forget what time it is because everything feels slow and calm. We are already planning to go back next weekend maybe earlier in the morning when it is quieter. If you want to join let me know because it is a pretty easy loop maybe two miles total and really peaceful. I think you would like it a lot especially the part where the trail opens up into a little meadow with wildflowers.
