I tried making fresh pasta from scratch last night. It was a lot easier than I thought it would be. The key is to let the dough rest long enough so the gluten relaxes. I made a simple cacio e pepe sauce and it was delicious.
Adding the 9cedw7fMFTm pecorino Romano at the end really brought out the flavor. You have to work fast when you toss it so the cheese doesn't clump. I found a great recipe online that uses egg yolks and semolina flour. The texture was so much better than dried pasta. I am never going back to store bought.
I want to try making ravioli next time. Maybe a butternut squash filling with a sage brown butter sauce. My friend recommended a good Italian cookbook so I might pick that up too. Cooking has become a really nice way to unwind after work. It is very meditative. I used to see it as a chore but now I look forward to it.
The best part is eating the results and sharing with my family. Even the kids got involved in rolling out the dough. It was a bit messy but a lot of fun.
