Yeah the sourdough thing takes some patience but once you get the hang of it it becomes pretty routine. I found that keeping the starter on the counter and feeding it once a day works best for me. The key is to watch for the bubbles and the smell rather than sticking to a strict schedule. When it smells fruity and tangy you know it is ready. I have been using a mix of bread flour and spelt which gives it a nice flavor. The hydration is around 75 percent which gives a good open crumb without being too sticky to handle. I usually do a cold proof in the fridge overnight which makes it easier to score and the flavor develops more. Let me know if you want me to walk you through the steps I use.

Also I found that using a kitchen scale instead of measuring cups makes a big difference in consistency. The starter seems to respond better when the ratios are exact. I feed it 1 to 2 ratio of starter to flour and water and that keeps it happy. The discard can be used for pancakes or crackers which is a nice bonus.

Honestly the garage organization project went better than I expected once I decided to just focus on one wall at a time. I used those heavy duty aluminum shelves that bolt into the studs and they are really solid. The clear bins from the container store work great because you can see what is inside without having to pull everything down. I grouped things by category like gardening tools on one section and auto supplies on another. I also added a pegboard for the frequently used tools which freed up a lot of drawer space. The whole thing cost less than I thought it would and I ended up with enough room to park the car inside again. For the labeling I just used a simple label maker but written tags with masking tape would work just as well.

The next phase is the basement storage which is a bigger project but I am using the same approach. I picked up some metal shelving units on sale and I am going to use clear bins again for seasonal items. The key is keeping things visible so I do not end up buying duplicates of things I already have. I am also adding a small workbench area with a vise for little repairs.
