I tried making that sourdough starter from scratch like you suggested. It was going really well for the first week. It smelled nice and tangy, and it was bubbling up like crazy. Then I went out of town for the weekend and asked my neighbor to feed it. I think she misunderstood the instructions because she fed it like a whole cup of flour instead of a tablespoon. When I got back, it had exploded out of the jar and was all over the kitchen counter. There was a distinct fermented fruit smell that took days to air out. I salvaged a tiny bit from the bottom and I am trying to nurse it back to health. It is a lot more work than I expected, but I am determined to get a decent loaf of bread out of it eventually. Baking is definitely a science. Anyway, how is your starter doing? Let me know if you have any tips for reviving a neglected one.
I have been reading a bit about different hydration levels and I think my original mix was too wet. I have added more flour to the remnant and it seems to be responding well. The bubbles are smaller and more uniform now. I am hoping to bake with it by the end of the week. Wish me luck!

I finally organized my closet this weekend. It was a complete disaster zone. I found clothes I forgot I even owned, including a sweater from high school that somehow still fits. I managed to fill three whole garbage bags for donation. It feels so cathartic to get rid of things you have not worn in years. I also found a box of old photos and ticket stubs from concerts we went to back in college. It was such a fun trip down memory lane. Do you remember that awful indie band we saw at the campus pub? They were terrible but we had such a great time. Anyway, I sorted everything into labeled bins. Now I can actually find my shoes in the morning. I highly recommend doing a deep clean if you have a free weekend. It is incredibly satisfying.
I also reorganized the drawers with those foldable inserts you recommended. They make a huge difference. Now everything has a place and it stays neat much longer. Next weekend I am tackling the garage. Wish me luck!
