I think the key is to let the dough rest a bit longer than you normally would. I tried that last weekend and the texture came out much better. The hydration level makes a big difference too. If you add the water gradually, you can adjust based on how the flour feels. I have been experimenting with this for a few weeks now and the results are consistently better. The temperature of the ingredients matters as well. I let everything come to room temperature before starting. Also, if you want a crustier exterior, you can try a higher oven temperature for the first few minutes and then reduce it. The whole process took about three hours from start to finish, but most of that was inactive time while the dough rested. I think you will be happy with the outcome if you give it a try.
Another thing I noticed is that using a slightly different flour blend changed the texture noticeably. I mixed equal parts of bread flour and all-purpose flour and the structure held together better. I was thinking about what you mentioned regarding the weekend trip. The cabin we looked at has availability next month and the rates are reasonable. It has three bedrooms and a full kitchen, so we could prepare meals there. The hiking trails nearby are supposed to be excellent this time of year.
