Yeah I tried that mushroom risotto recipe you sent me last week. It turned out pretty well actually though I think I added too much broth at the beginning so it took longer to cook down. Next time I'll go a bit easier on the liquid and maybe toast the rice a little longer before adding the wine. The texture was still creamy but just slightly looser than I wanted. I also threw in some fresh thyme and a bit of lemon zest at the end which really brightened it up. My partner said it was one of the better ones I've made in a while so that's a win. I'll probably make it again for the dinner party next month but I'll do a test run first to dial in the timing. Let me know if you have any other good recipes especially something with seasonal veggies. I've been trying to cook more with what's available at the market rather than just buying whatever looks good. Makes it feel a bit more intentional. The whole process was relaxing too just taking an afternoon to focus on something simple.

I think the key is really in the stirring and the patience. You can't rush it or the starch won't release properly. I used arborio rice which I know is basic but it works. Next time I might try carnaroli just to see if the texture is noticeably different. Anyway thanks for sending it over. I always trust your recommendations.

Honestly I finally watched that documentary you recommended and I get why you were so into it. The cinematography was stunning especially the aerial shots of the coastline. I didn't expect the narrative to take that turn in the second half though I thought it would stick with the environmental angle longer. The human story at the center really carried it for me. I've been thinking about it for days now which is usually my sign that something landed well. I passed the title along to my brother who's a photographer because I think he'd appreciate the visual storytelling even if the subject matter isn't usually his thing. We're planning to watch it together next weekend so I'll probably revisit a few scenes. Let me know if you come across anything else in that vein.

I'm always looking for recommendations that challenge how I see things rather than just filling time. The pacing reminded me of that film we watched last spring with the long takes and minimal score. There was something meditative about it. Anyway thanks for putting it on my radar. I owe you one.
