Yeah I totally get what you mean about the timing. We were talking about it the other day and I think we both agreed that waiting until later in the season might actually work better for everyone. The kids have their recital in early June and then there's that camping trip we kept saying we'd do. I was looking at the forecast and it seems like July would give us the most consistent weather anyway. Plus Jenny mentioned she could help with the setup if we pushed it back a little. I don't mind being the one to coordinate just let me know who else wants to weigh in. I was thinking we could do a simple potluck so nobody has to go all out. Honestly the last time we tried something like this it rained and we ended up crammed inside anyway so I'd rather pick a window where the odds are better. I finally got around to trying that recipe you sent me and honestly it turned out way better than I expected. I was a little skeptical about the marinating time because it seemed way too short but the flavors really came together. We had some friends over and they kept asking for the link so I just forwarded them your message. I think the key was letting it rest after cooking because that made a big difference in the texture. Next time I might try adding a little more garlic because we really love garlic in this house. The side dish you recommended was perfect with it too. I ended up using what I had on hand and it still worked great. I'm definitely going to make it again maybe for the next holiday get-together. Anyway I just wanted to say thanks for passing it along.
