I've been experimenting with different fermentation times for my kombucha. The first batch was way too vinegary. I let it sit for almost two weeks. The current batch I'm tasting daily. It's amazing how much the flavor changes. I think 7 days is the sweet spot for my kitchen temperature. Have you tried flavoring it with anything other than ginger? I was thinking of using some frozen berries I have. Anyway, let me know what you think works best. It's really fun to brew at home. I'm also looking into getting a continuous brew jar. Have you used one before? They seem pricey but might be worth it in the long run. I just need to find the time to keep up with it regularly.

I started another batch yesterday using green tea instead of black. I am curious to see how that changes the flavor profile. I have read that it creates a more delicate, grassy taste. I also added a bit of honey in the first fermentation, which I know is controversial, but I wanted to try it. Hopefully, it doesn't mess up the Scoby. I will keep you posted on how it turns out.

I finally got around to organizing my bookshelf. I did the whole color-coded thing. It looks really nice on the 'gram but honestly I can't find anything anymore. I might switch back to alphabetically by author. Or maybe genre. I haven't decided yet. It took me like four hours to do it. I had books stacked everywhere. My cat kept trying to sit in the boxes. It was a whole ordeal. Anyway, if you have any good book recommendations, send them my way. I'm in a bit of a reading slump and need something that hooks me from the first page. Maybe a mystery or a good thriller.

I just finished a really great non-fiction book about the history of salt. It is fascinating how much it shaped global trade and economies. Definitely a dense read but worth it if you are into that sort of thing. I am thinking about starting a historical fiction novel next, something set in ancient Rome maybe. I need to change up my reading routine. Let me know what you are currently reading. I would love to swap some recommendations to get me out of this slump.
