I ended up taking the longer trail, and I’m glad I did because the light was softer near the trees and it felt quieter once I got away from the parking area.

I tried the recipe this morning, and it worked better after I stopped tweaking it and just let it rest for a few extra minutes before putting it in the oven.
The texture came out much lighter than last time, which I think happened because I mixed everything less and kept the bowl colder from the start.
I also used the smaller pan you mentioned, and that definitely helped it bake more evenly through the center without overdoing the edges.
Next time I might add a little citrus zest just for contrast, but otherwise I wouldn’t change much because the basic version already feels solid.
If you make it this weekend, I’d suggest measuring everything first so it goes smoothly once you begin. That made the whole process feel easier and less messy for me.
