Hey, I finally got around to trying that sourdough starter recipe you shared a while back. It took me a couple of tries to get the hydration right but it is bubbling away nicely now. The whole kitchen smells warm and yeasty in the best way. I have been feeding it twice a day and it is tripling in size pretty consistently. I baked my first loaf last weekend and it came out decent for a first attempt. The crumb was a bit tight but the crust had that perfect crackle sound when I tapped it. I think I need to work on my scoring technique because the bloom was not as dramatic as I wanted. Still, it tasted good and that is what matters. I am hooked now. Let me know if you want some starter because I have plenty to share. Also, did you ever figure out that thing with your garden soil pH? I read that coffee grounds can help if it is too alkaline. Just a thought.

I finished that documentary series we talked about and the last episode really tied everything together beautifully. I was not expecting that reveal about the main subject's early life. It completely shifted my take on the earlier episodes. I think I need to rewatch the second season because there were so many subtle details I missed the first time. The cinematography was incredible especially the drone shots over the coastal cliffs. Have you seen the director's earlier short films? I looked them up and apparently they won several awards at independent festivals a few years ago. The soundtrack was also perfectly matched to each scene. I have had the main theme stuck in my head for days now. It is one of those melodies that just settles in.
