Hello! And happy May-day Friday!
In my mind, and in my stomach, it is officially spring/summer eating time! I've been creating and testing new summer recipes, which means the grill has been fired up!
Since January, I've been SO GOOD about cooking food from our freezer instead of always buying new from the store, unless it's for a new blog recipe, of course.
So when I discovered two beautiful pork chops, I rescued them from freezer burn alley to make our favorite Mediterranean pork chops.
We went with our usual sides of tomato avocado salad and lemon rice with dill, and the meal delivered pure summer joy.
