Located on the Baja Peninsula, it feels like a version of Mexico I had never experienced. Reminiscent of Palm Springs (my favorite place ever), with a stunning desert landscape, it has the extra perk of sweeping ocean views. I just spent 4 days escaping New York City winter and swimming the afternoon away in Cabo. During my visit, I stayed at gorgeous hotels that felt like home, with ocean views with unobstructed sunsets, food so good you are left speechless and clear sunny days perfect for coming home with a tan. The highlights are endless, but an afternoon on the water seeing countless gray whales breaching, evenings eating grilled, freshly caught fish, and poolside margaritas are what I can’t stop talking about. | | | | Morning: We woke up bright and early, had a light breakfast at Mesa Madre, the restaurant at Park Hyatt Cabo Del Sol, and the tamales were perfection. Then we headed over to the marina for our whale-watching tour.
We visited the famous Arch, a rock formation at the southern tip of Cabo San Lucas, before heading further out to sea. The tour began with us snorkeling with stingrays, then spotted some whales and headed over to watch the show. Later, we also came across a pod of dolphins and hopped in the water for a swim. But the highlight of the day was when a gray whale, roughly 45ft long, swam directly under our boat; it was one of the most beautiful things I’ve ever seen. Lunch was delicious burritos onboard, before heading back to the marina.
| | | | | Evening: I started my evening with a massage at the Park Hyatt, then headed to dinner at the beach club, where we got to try the southern Mediterranean-themed menu for the upcoming restaurant, Silán. The food was impeccable, from the classic Greek salad to hummus to a delicious kebab, so tender and juicy that it melted in our mouths.
| Getting around: All our transportation was arranged through TransCabo, but Uber is readily available and an affordable option for getting around.
What we ate: We primarily dined at our hotel, as people staying at resorts tend to do in Cabo.
