Give me the chicken salad! Let's make a classic tuna salad! When summer hits, any classic “salad” that ditches the leafy greens in favor of a creamy, mayo-based dressing is okay by me.

Today I'm sharing another classic protein-filled, dreamy creamy salad: Shrimp salad.

As much as I love all the fresh flavors going on in this Citrus Shrimp Salad and the peppery bite of arugula in this Pesto Shrimp Salad, this super simple shrimp salad (try saying that five times fast!) is my go-to for potlucks, picnics, and bbqs.

I start with the easiest method for making poached shrimp, which takes mere minutes to cook, then chill.

I toss them with a homemade lemon dill dressing and a little celery and onion for flavor, and pop it in the fridge for the flavors to marry.

It's a fast and fast, easy, fuss-free potluck side dish, but I like it as a light main dinner on its own, or for lunch in a wrap, or packed in lettuce cups.
